周末一位難求!酒店中菜廳時令好菜:清香禮雲子蝦米炒柚皮、鹹檸檬蒸大蟶子、高貴版臭豆腐!幾飽都要吃北京烤鴨、鹹蛋黃雪糕

  應該因為日本成為復仇式旅遊的主要目的地,加上日圓持續下跌,又有平價機票的關係,現在香港的日本餐廳不再預約困難,反而中菜廳變得一位難求。好像沙田凱悅酒店的沙田18,想在周末去歎點心、食招牌北京填鴨的話,就起碼要早一個月預訂。生意好,也沒有讓何振雄師傅停下腳步。今個夏天,繼續設計出新菜式。想想上次前往沙田18已是多年前,是時候再來品嘗何師傅的手勢!

 

沙田18落地玻璃窗外的景色,感覺青山依舊。

 

  每次來到大學站,都有種恍若隔世的感覺。山腳山上的面貌與當年在此唸書時已改變不少,但青山當中依舊能夠尋找記憶憑據。來到沙田18,當然要點北京烤填鴨。這裏的北京烤填鴨快要取代乳鴿成為沙田名物,水準穩定,口味是老北京的正宗地道,鴨皮烤得酥化有厚度,中間有空氣感,油脂入口化作豐腴,單是那層皮已值得一訪再訪。另外肉嫩鮮香,多吃不膩,現在也邊寫邊回味。

  接著來,便是何師傅的新菜式。來到夏天,想起海鮮,何師傅設計出四款海鮮菜式。當中鹹檸檬蒸大蟶子十分開胃,鹹檸檬切絲後與開邊蟶子同蒸,鹹酸甜味平衡,也帶出夏日的清新。我更喜歡辣椒餅四角豆爆炒蝦球,氣溫高企的時候,特別想吃濃香型菜式。辣椒餅由何師傅自製,辣椒香辣,更帶有豉椒鹹香,香氣濃淡恰到。蝦球肉厚,十分脆爽鮮美,而且炒得十分入味,有鑊氣而不熱氣。叫人吃不停口的,還有坊間少見的四角豆,清爽甜香,撈飯應該不錯。

辣椒餅四角豆爆炒蝦球  $388

 

  蝦子柚皮是經典功夫粵菜,從來沒想過這道菜有變奏的空間,何師傅今次卻做出驚喜。師傅先以豬油炸香柚皮後,再加上禮雲子和蝦米同炒。炒柚子外層微脆,中間軟綿得入口即化,滲出淡淡豬油與柚皮結合的甜香。至於每逢清明前後當造的禮雲子,即蟛蜞蟹子,而人手逐隻於蟛蜞中挑出來,所以十分珍貴。禮雲子鮮味無窮,加上蝦米,香氣濃厚馥郁。
