情人節在家吃最安全:3款浪漫前菜、主菜、甜品,1小時搞定!

廚職背遊世界 600天,現時我在英國任職廚師,掌握到很多歐洲菜式的竅門。

 

  下星期就是情人節!但武漢肺炎肆虐,全城憂心重重,口罩供應短缺,放工後,還要東奔西撲消毒用品,身心俱疲!哪有心情訂餐廳、想節目慶祝?

 

武漢肺炎肆虐,與其擔心外出高風險不如試試親自下廚,安坐家中二人世界!

 

  如果擔心去人煙稠密地區,增加感染風險,不如試試親自下廚,留在家中二人世界!以下介紹 3款既浪漫、又易煮的菜式,集齊前菜、主菜、甜品,讓你和最愛在亂世之中,吃一頓窩心的住家燭光晚餐,共度安逸又甜蜜的情人節!

 

 

1/ 前菜:啜啜辣酒醉蝦

 

 

簡單度:****

需時:約 20 分鐘

推介原因:你可以早一晚把辣酒汁煮好,放入熟蝦,在雪櫃醃一晚,情人節當晚放工回家就可以立即吃!

 

二人份量材料包括:

 

  1. 基圍蝦 10-20隻(視乎喜好)

  2. 玫瑰露 100ml、紹興酒 100ml

  3. 蠔油 / 豉油 3 茶匙

  4. 水 150ml

  5. 冰糖 1-2 顆

  6. 蒜頭拍碎 3 顆、薑 3 片、葱段少許

  7. 辣椒 2隻(視乎喜好)

 

用剪刀剪走蝦的觸鬚,剪齊蝦腳、蝦尾,再洗乾淨,整整齊齊,賣相更美觀,亦更入味

 

烹調步驟:

 

  1. 煲滾水,加入 1茶匙鹽,烚熟基圍蝦至橙紅色,需時約 5-7分鐘(想蝦肉更爽脆,可先放少許白醋或檸檬汁),撈起瀝乾,放涼備用

  2. 一口氣把蒜頭、薑、葱、辣椒切好,放進另一個煲裡

  3. 放入玫瑰露、紹興酒、蠔油、水、冰糖,略略攪拌一下

  4. 開中火煮至微滾,然後轉小火繼續攪拌,煮 5分鐘,辣酒汁即成。

  5. 倒辣酒汁至湯碗,或你喜歡的上菜器皿,放涼後,加入預先烚好的熟蝦,封上保鮮紙,放進雪櫃,第二天即可享用!

 

 

心得分享:

 

  1. 喜歡吃蝦頭的朋友,還可以改用越南大頭蝦

  2. 細心的朋友,可以為另一半剝走蝦殻再醃製;但我個人較喜歡邊吃邊剝殻,因為辣酒汁可以掛在蝦殻上,更加滋沬!

  3. 想走辣的朋友,不放辣椒就可以!原味醉蝦也很好吃。

  4. 輕輕拍碎蒜頭、薑片、葱段,幫助入味

  5. 蠔油可以令辣酒汁有點濃稠,又帶甜味。沒有蠔油的話,用豉油代替亦可。

  6. 玫瑰露有獨一無二的香氣,但若果全部用上玫瑰露,氣味太濃,未必人人接受。用 1:1 的紹興酒或米酒調配,可令辣酒汁既有玫瑰露香味,又不至於太嗆口。

 

最關鍵是,和煮 Mulled Wine 的原理一樣,不要煮滾辣酒汁,微微冒煙,慢火加熱,否則酒精全揮發掉,酒味就會大大降低。(歡迎重溫:普世歡騰!酒杯裡的浪漫佳節:為愛人煮一鍋暖笠笠聖誕古羅馬熱紅酒

邊吃邊吸啜辣酒汁,非常上癮!同樣的醉酒汁,你還可以醃青瓜、木耳、雞件等。
